Fluffy Spinach and Bacon Quiche

½ cup mayonnaise
½ cup milk
4 large eggs, separated
1 package fresh spinach, chopped
8 ounces Cheddar cheese, shredded
½ Lb bacon, chopped
¼ cup chopped onion
1 (9 inch) unbaked pie shell (optional)

Mix the mayo, milk, and egg yolks together in a bowl. whip the egg whites until they are foamy. Do not over whip or the quiche will bee too light. Add egg whites to the mayo mixture and stir gently until just combined.

cook the bacon. Then layer the spinach, bacon, onion and cheese in the pie shell, making several layers. Port the mayo mixture over the top to fill the pie shell.

Cover. Back 45 minutes at 400. Uncover. Bake 15 more minutes.

If making mini quiche bites there is no need to cover. Reduce time not temperature.
